Not only does this waste money, it also harms the environment. Over the course of a year, the fermentation processes of a 40,000 barrel operation has a carbon footprint equal to that of roughly 50 automobiles. While there are existing systems that recapture CO2 from fermentation tanks, most are designed for large-scale operations, making them out-of-reach for smaller craft breweries.
